Castilla-La Mancha is a region in central Spain to the south and east of Spain’s capital Madrid. The setting of the 17th-century novel ‘Don Quixote’ by Miguel de Cervantes, it's home to plains dotted with vineyards, castles, windmills, sunflowers and Manchego cheese.
